Tighter cancellation policies for high demand dates

Hi I am struggling in finding a way that for bookings for high demand periods are less flexible for cancellation (ideally, e.g. for Easter week or c
Christmas /new year week, booking should have 14 days max in advance cacellation - vs usual 3 days in advance. Even better if this restricion would apply for bookings > three nights..but I could live without this last featurs)
In Booking.com they allow to define 30 days in one year where you have less flexibility to change dates)
I am trying setting up an addittional Offer with 14days cancellation policy, but ... if set it up for the whole year ... it will appear always (I don't want) if I set up for the dates of high demand and eliminate for those dates the 3days cancellation Offer, the potential bookings with dates in both offers will have no availabity. ... any hint or alternative for a set up to prevent cancellations for certain dates?
