If I wanted to stop arrivals for a particular day (e.g. Sunday) but allow arrivals for any other day, is there a way I can configure this?
E.g. Saturdays is OK to arrive for multiple nights, these customers would then be on-site on Sunday, but no-one could arrive on Sunday itself.

You can use the "Override" function in the CALENDAR to do this. When you click on the context help next to the setting you find instructions how to do this.

Do you know if I can I upload the Override setting for bulk dates / multiple room types using putRatesCSV ?
I see column headings like : canstmon, canenmon, caninmon which suggest they are for this - or is there a manual-doc on all the headings in putRatesCSV ?

You can set the override for any dates in your calendar using the JSON api function
https://api.beds24.com/json/setRoomDates
There is a CSV function to do it in rates but you are limited to setting by days of the week, as per the settings within a rate.
