Is there a shortcode for the checkout-time of the guest I can use in the messages?

You can set the Check-time in (SETTINGS) CHANNEL MANAGER > PROPERTY CONTENT 'Check-in end'
Then you can use [CHECKINEND] as the template variable for the communications with your guest.
