Is there a way to get the booking value widget on the dashboard to show the total value of all currently open/not cancelled bookings? If not, how do I configure a report to show this information?

When you 'unlock' the dashboard, you can click on the 3 dots for the Dashboard module 'Booking Value' you can set the period = 7 days.

Sorry, not quite what I'm looking for, my wording wasn't great.
The widgets are all showing bookings which have been added over a given historical period.
I'm trying to find a way to see the value of all the bookings which will happen next year.

You can go to Reports and run one of the Standard Reports > Financial.
if you want to see the details on the dashboard, then you can create a Custom Report in Reports > Custom Reports, set the details, dates and select the columns you want to see, then when you are happy with the report.
You can customise your Dashboard and add the Custom Report to your Dashboard so it will show the latest details.
