How can I setup mote then 5 upsell items?

Once you have used five another one will be automatically added.

ok thanks, I found the problem.
In fact I was looking to use upsell items as a possibility to add extra sales to the bill on the check-out (like meals and drinks they have used) So I would like to have upsell items that are not visible for customers on booking.
How can I do this, or is there a better way for this?

You can set up items you offer on site as "Invoice Items" in Settings > Guest Management > Invoicing.
