I am sad that I can't use template variables in Offer decriptions.

Every time I update a description I have to edit every offer.
With your setup we can see that you have 3 offers, #3 is for Special Events.
If you want set a description for a special event, then you need to create an Offer for each Special Event. Set the details including the Description in the Offer for that Special Event, then setup the Rates/Daily prices with the specific Offer number, then this will be used on the booking page and communications with your guests.
