The widgets can be fully customised, the options appearing in the selectors can be changed by anyone with a little web design experience or knowledge of HTML or javascript.

I thought that the options would be possible to be set by shortcode.
I found this file in the plugin: beds24-online-booking/theme-files/beds24-strip.php
All changed were made here and it works fine.

Ahh, you are referring to the wordpress plugin?
The wordpress shortcodes can contain parameters to specify some values as per the plugin documentation.
You can also fully customise the HTML of the widgets any way you like including the options in the selectors, the files for each widget are in the "theme-files" directory of the plugin.
