I do not understand. I set my calendars for two nights minimum in normal
setting. When I change this data in the calendar to increase the minimum
duration to three or five nights, Airbnb does not apply it.
Can you help me ?

It can take a few hours for Airbnb to show the changes in their calendar.
Anyone trying to book will need to use your updated rules straight away because Airbnb do a live check for availability at Beds24 before allowing the booking to proceed.

Same issue. We have longer minimum stays set up months in advance for holiday weekends, but Airbnb still allow shorter bookings. There is a suggestion in the Airbnb channel setup instructions to set them to "request" rather than "confirm" but no information on where or how this is done. Is this the only option (apart from giving Airbnb the flick, which is very tempting) and if so, how?

Do you see the correct min stays in the "View Actual Data" for Airbnb?
If they are shown there, they should be sending.

Go to SETTINGS-CHANNEL MANAGER-AIRBNB XML in Beds24 and you will see the button.

Whatever it says in the Min Stay column is what we are sending to Airbnb, you can alter this by changing your values in Beds24.
If you are not sure where the values are coming from, best is to start a support ticket.
